Perthshire Pet Nat
Our Perthshire Pet Nat is a naturally sparkling dry cider made with 100% Scottish apples and minimal sulphites. It’s a blend of unfiltered ciders, spontaneously fermented in stainless steel and ex-sherry casks – and made solely from handpicked Scottish apples.
Carse Cuvee
Our Carse Cuvee is a brut cider for special occasions. We use méthode traditionnelle to make this unfiltered and naturally sparkling cider. Like all our ciders, it's made solely from Scottish apples, picked from chemical-free orchards right here in Perthshire and contains minimal sulphites.
Aster
Aster is an unfiltered and spontaneously fermented Scottish perry made using handpicked Scottish pears from the historic Carse pear orchards. It has been bottle-conditioned to create a gentle sparkle and contains minimal sulphites.
Kin
Ciderkin is a great (and old) way of getting that little bit more out of an apple; to create a low-alcohol and refreshing cider. Our small batch Ciderkin uses handpicked Scottish apples and is made by rehydrating the pressed apple pomace overnight with water, before pressing it a second time. Contains minimal sulphites.
Still or Sparkling
The age-old question: which is better, still or sparkling cider? To contribute to this long-running debate, we have taken the same blend of unfiltered ciders, spontaneously fermented in stainless steel and wooden casks - and created a pair. One is perfectly still, the other utilising bottle-conditioning to create a gentle sparkle. Both ciders were bottled on the sameday and then aged for a further six months.
Apple Cider Vinegar
We create our aged Apple Cider Vinegar using the traditional Orleans method. Taking a little of our unfiltered fermented cider, we age it in oak barrels for one year whilst our magical mother culture transforms it into vinegar. This contains 100% Scottish apples and is a live, unfiltered and unpasteurised vinegar, which contains ‘the mother’.
